Chocolate Banana Oat Pancakes
Oh, how I love these chocolate banana oat pancakes. I crave them throughout the day. I usually have them for breakfast but if I am having a chocolate craving or want something sweet,I will have these for my after school snack. It keeps me from eating whatever the kids are eating when they get home. I don't have a good working grain grinder at the moment but that doesn't really matter with these. I just take my rolled oats and put them in the blender for about 30 seconds and I have oat flour. This recipe is so simple. It only has 5 ingredients to make the pancakes.

Oat flour, baking soda, salt, egg white and buttermilk. I like to make a mix of this and then it is even faster to throw together. Mix the 5 ingredients together and then add buttermilk. Let this set for about 10 minutes, it will thicken up. Then add about 1/2 cup more water or until it reaches the desired consistency.
Now you get add all of the fun stuff! Top the pancakes with the sliced banana, cool whip, and chocolate syrup.
